# Is Couscous Vegan? (Butter & Broth)

Couscous is both a grain and a dish, and the two have different answers. The grain is vegan; the
dish usually is not. Here is how to tell them apart.

> **Key Takeaways**
> - Plain couscous (steamed semolina) is vegan.
> - The full dish is usually served with a meat stew and cooked with butter or meat broth.
> - A "vegetable couscous" is the vegetarian option, but confirm it is cooked in oil and vegetable broth.
> - Check for butter and meat stock to keep it vegan.

**TL;DR: Plain couscous is vegan**: it's steamed semolina (wheat). But the dish is usually
served with a meat stew and often cooked with **butter or meat broth**, which makes it not vegan.

## The grain vs. the dish

- **Couscous (the grain)**: semolina wheat steamed into granules. Vegan by itself.
- **The full dish**: traditionally served with a **lamb, chicken or fish stew** and vegetables,
and the grains are often tossed with **butter** and cooked in **meat broth**.

So a restaurant plate of couscous is usually **not** vegetarian or vegan by default.

## How to order vegan couscous

- Ask for a **vegetable couscous** ("couscous aux légumes") with **no meat**.
- Confirm it's cooked in **oil and vegetable broth** (not butter or meat stock).
- Check for chickpeas and vegetables as the topping.

## The bottom line

- **Vegetarian?** Only the vegetable version.
- **Vegan?** Vegetable couscous cooked in oil/veg broth, no butter.
